Chocolate Ice Cream

Enjoy a fast and easy rich chocolate ice cream without using an ice cream machine!!


Nothing is better on a hot summer day than a special treat of ice cream.  When we were kids, there was an ice cream truck that drove through the neighbourhood in the summer months and we all waited patiently for that special time of the day when you knew the truck was coming as it was preceded with that great carnival type music.
  I know that the ice cream truck is pretty much a thing of the past, but there are many ice cream shops ready to scoop you out your favourite flavour.

When we go out for a drive on the weekend or are out and about, stopping for a good old fashioned ice cream cone is a welcome treat.  The flavour choices are many but I always seem to lean toward a cone filled with rich chocolate ice cream.

I had to share with you another great ice cream of the no churn variety. Just three ingredients and about 10 minutes of prep time, you can have this in the freezer in the morning and be ready to scoop and enjoy for dinner!!

This creamy delight is delicious as is but  you can rev up the chocolate level even more by adding in chopped chocolate from a plain candy bar or with mini chocolate chips.

Whether you enjoy your ice cream in a cone or like to enjoy the pure creaminess in a bowl, it certainly makes a great finish to dinner.  We have been enjoying a small bowl every night after dinner and it is soooo yummy!! Through the day, I am so tempted to pull out the container and have just a little bite.  It's taking all of my will power to try and forget that it's in there and wait till dinnertime.


Chocolate Ice Cream

Ingredients
  • 2 cups whipping cream
  • 1 14 oz. can condensed sweetened milk (300 ml)
  • 1/2 cup chocolate topping (Smuckers or Hershey)
  • Optional
  • 1 cup mini chocolate chips or chopped chocolate
Instructions
In a large bowl with electric mixer and using whisk attachment, beat whipping cream until stiff peaks form.
In a medium bowl, combine contents of sweetened condensed milk and chocolate topping. Stir until thoroughly combined.
Add to whipped cream and gently fold in to combine. Whip again with the electric mixer for about 1 minute to ensure mixture is totally combined and fluffy.
Manually fold in chocolate chips or chopped chocolate, if desired.
Spoon into a freezer safe container and freeze for about 6 hours.
Scoop and enjoy!!
